Roast Potatoes

When deciding for lunch menu, mostly potatoes are first which come in mind and everyone loves them. So when my friends invited themselves for lunch on a lazy Sunday, roasted potatoes were the first choice. These are so simple to make and make a great lunch menu. I believe, you can never go wrong with potatoes. They taste great no matter how you cook. Also i have all potato fans around me which makes my job so much easier. Baked potatoes with zucchini dip were treat for everyone. Here goes the recipe-

Ingredients
  1. Potatoes - 4
  2. Olive oil- 2 tablespoon
  3. Garlic - 3-4 cloves
  4. Chili flakes - as much you like
  5. Vegetable broth - 1/4 cup
  6. Thyme- 1/2 teaspoon
  7. Rosemary - 1/2 teaspoon
  8. Coriander - as much you like
  9. Celery- to garnish
  10. Pepper - 1/2 teaspoon
Instructions
  1. Rinse the potatoes well. Cut in to mid-sized pieces and boil till they are soft. I microwaved for 5 minutes.
  2. In the meantime, add garlic, pepper, chili flakes and some coriander with olive oil in a bowl. Transfer the potatoes in baking tray and generously coat them with oil mix. Make sure you cover the potatoes well.
  3. Sprinkle thyme and rosemary onto it. Pour 1/4 cup of vegetable broth in the tray. A
  4. dd some celery and basil leaves on top. Scatter some crushed garlic on the potatoes.
  5. In the preheated oven at 200'c roast the potatoes for 30-40 minutes or until they are golden brown in colour.
  6. take out the tray and garnish with chopped coriander and celery.
  7. Serve with zucchini dip. These potatoes were simply potato like delicious.
