So, say you want something light, nutritious, colorful and easy to cook while you also want to unload your refrigerator a bit. You can use various vegetables together to make this wonderful dish. You can use this as side dish, as a rich salad, in breakfast or even include for a brunch or light dinner.

Ingredients
  1. Olive oil - 1 table spoon
  2. Butter - 1 table spoon
  3. Oregano - 5 leaves or ½ tea spoon if you are using dry one
  4. Thyme - ½ tea spoon
  5. Onion - 1/2
  6. Shallots - 2
  7. Celery - To garnish
  8. Mint Leaves - To garnish
Instructions
  1. You can totally add/delete to this list of vegetables, choose your favorite ones. Start with boiling the vegetables in a pan. Do not put too much of water, just enough to cover the surface of vegetables and boil. Add a little salt and let it boil till the vegetables are soft.
  2. In a pan heat olive oil and add some butter. Crush garlic and add.
  3. Once this is golden in colour, add finely chopped onions and green chilies.
  4. Let it cook for a while, just when it starts changing colour add the pretty tiny shallots and chopped spring onion.
  5. Cook until all of this gets soft and tender.
  6. Now is the time to throw in the boiled vegetables. Add them in the pan. Mix it well and add chopped tomatoes.
  7. Sprinkle oregano, thyme, salt to taste and mint.
  8. Sprinkle it with some water, close the lid and let all the flavors blend together.
  9. Add the fresh green celery leaves when cooked,
  10. Mix it well and you are all set to relish it.
