From when my eyes set sight on those golden yellow delicious looking chips to when I feel the sensation of those thin long crisps between my fingers and to when I get the taste of yummy sweet potatoes on my palette, the whole experience is a feast for my soul. I love fries and i am very serious about it.
I have always been fond of dusty, rustic and humble sweet potatoes. I remember, along with winters, came sweet and spicy sweet potato ‘chaat’ as part of Delhi street food. It was such a delight in bone freezing, chilling, foggy Delhi winters. They used to put a lot of lemon juice, chat masala and spices to make this mouth watering chaat. As much as I loved that chaat, I missed the plain and simple roasted sweet Potatoes which Mom used to roast on gas oven. On carefree, lazy Sundays, we so lovingly snacked on those roasted sweet potatoes with little sprinkle of salt. So easy to please kids, i tell you!
I specially love the subtle sweetness of this root vegetable. It is exactly my type of sweet. This vegetable, ladies and gentlemen, definitely deserves more love. So go ahead, get this dusty but pretty looking vegetable from the market and try some recipe with it. I would say, you start with these fries.Yes, fries! This recipe has some tweaks in it, using sweet potatoes instead of your regular potatoes (but just as tasty) and roasting instead of frying. The taste – just as good. The guilt – almost nil. All you need is little bit of rock salt, some olive oil and lemon juice. Mix all these together and pop in oven.
Enjoy this lip-smacking, finger-licking, not-so-sinful version of fries.
- 2 Sweet Potato
- 1/2 tsp rock (black) salt
- 1/4 tsp table salt
- 1 tbsp lemon juice
- 1 tsp olive oil
- Clean sweet potato thoroughly. You can peel off the skin if sweet potatoes look dirty.
- Slice them in shape of fries.
- Mix all the ingredients together.
- Roast at 220'C for 17 -20 minutes. I had combined oven and grill option.
