You will close your eyes, take a deep breath, focus all your senses around taste buds, and very slowly relish the bite so you don’t skip a single flavour; yes, vanilla and mint flavored roasted peaches and plums with coconut ice cream and some nuts on top is that good. Try it to believe it.
Last year was busy but also good to me. Our’s was July wedding, which left us simmering in torturous heat, drained, exhausted but happy nonetheless. We needed a quite place to relax, catch a breath and soak it all in and that is how we landed in a quaint, small town nestled in the lap of Himayalas called ‘Ramgarh‘. Exactly our kind of place. It’s not big in tourist map, so there still is innocence and feeling of deep calmness there. I often wonder, what is the mysterious relation i have with mountains, which draws me with such force that my heart aches to be there. Being at those curves, all the greens around, looking up at mighty mountains standing tall, weather working by minutes, playful sun and imagining the unknown mystical world which lies the other side; it makes me happy. Happiness so strong that it shivers my body from inside. In this small town, where time runs slow and locals grow fruits for living, we found ourselves in midst of orchards of peaches, plums, apples and berries. I saw the peaches and plums on the tree for the first time which made me giddy like a little girl. We chose, plucked and tasted ripe and juicy, sweet, some sour peaches and plums right from the trees. Warm orchard owners delightfully let us. I still some times feel the taste of those peaches and day dream about that lovely place. There was the feeling that thing are going to be alright now and life can be this beautiful.
If you happen to be in northern part of India and you need to clear you mind, feed your soul, you should definitely visit this place. You would understand why Mahadevi Verma and likes of Sumitranandan Pant chose this place to write their best of works. Finding the museum dedicated to Mahadevi Verma was so exciting, too bad it was closed. Next time may be!
I am far far from Ramgarh, there is no calm, no greenery and no mountains either but i found peaches and plums the other day. They would have tasted the best on it’s own, but i tried to make them even better. I added some more goodness in them, roasted them and then added even more goodness (read ice cream) and it was like heaven melting on plate.
It is simple. Slice peaches and plums. Mix brown sugar, vanilla pod, lemon juice, mint and some butter. Dunk the fruits in this mixture and roast. Peaches and plums will become soft and will absorb all the juices and falvours of vanilla, mint and lemon. Sweetness and tanginess of these fruits, freshness of lemon and mint and the hint of vanilla, churns the flavors so pleasing that it is a real treat to taste buds. Adding the scoop of coconut cream ice cream or any other that you like, will make a dessert that people will know you for. Ohh, don’t forget to sprinkle some nuts on top.
- 3 Peaches
- 3 Plums
- 1/4 cups brown sugar
- 2 tbsp butter
- 1 tbsp lemon juice
- 1 vanilla pod split and scraped
- 1 lemon wedge
- handful of mint leaves
- Nuts of your choice
- Wash and clean peaches and plums.
- Slice them in mid size wedges.
- Mix butter, brown sugar, split vanilla pod, mint leaves and lemon juice together.
- Mix this mixture with sliced fruits. Add a lemon wedge for enhanced flavor
- Roast for 15-20 minutes or until peaches are soft at 180'C
- When the fruits are at room temperature, peel off the skin of peaches.
- Serve the fruits along with scoop of coconut cream ice cream. Drizzle some juice over ice cream.
- Finish off with some nuts on the top. I have added sliced almonds.
