Healthy Dal Makhni Recipe

Dal Makhni (mixed lentil) is delectable, absolutely must try Indian lentil recipe but it is mostly loaded with a lot of butter, ghee, cream and spices, which makes it super delicious but not something you would want to have everyday. 

Dal is a staple at our household so I try different varieties and mostly try to keep it healthy. Infact my very first recipe on blog was dal recipe. Our absolute favorite spinach dal. Check it out here if you want to add another variety of lentils in your recipes. So here is recipe for healthy dal makhani which you can have more than often. I have used yogurt here, if you substitute it, this will be a perfect vegan recipe.

  1. 1 cup whole urad dal (black gram)
  2. 1/4 cup rajma (kidney bean)
  3. 1 bay leave
  4. 1 black cardamom
  5. 1/4 tsp heend (asafoetida)
  6. 1 onion
  7. 3-4 garlic cloves
  8. 1/2 tsp ginger
  9. 1/2 tsp cumin seeds
  10. 1 tsp red chili powder
  11. 1 tsp coriander powder
  12. 1 tsp turmeric powder
  13. 1/2 tsp garam masala powder
  14. 1/4 cup thick yogurt
  15. Oil for tempring
  16. Salt to taste
  1. Soak urad dal and rajma overnight.
  2. Wash lentils thoroughly, Add 31/2 cup water in pressure cooker along with lentils and add bay leave, black cardamom, heeng and salt. Close the lid and let it cook on medium heat.
  3. Lentils will be cooked in 4-5 whistles but it may depend on pressure cooker you are using.
  4. In a separate kadhai, heat 2 tablespoon ghee or oil. Add cumin seeds when oil is hot.
  5. When cumin starts to splutter add crushed garlic and thinly chopped ginger.
  6. When garlic turns golden in colour, add thinly chopped onions, chili powder, coriander powder, turmeric powder and garam masala. Let it cook.
  7. When onions and masala are done add cooked lentils and let it simmer on low heat. At this point you may adjust consistency of lentil as you like.
  8. Add yougurt at this point and mix it well. With the help of a big spoon, coarsely ground the lentils, it will help to thicken the consistency and bring everything together.
  9. Dal is ready. Serve with hot bowl of rice.
